Cowboy Caviar


There are a lot of recipes for cowboy caviar and this is my favorite. It's pretty and a very tasty way to get everyone to eat their veggies. 


1 green pepper, chopped

1 orange pepper, chopped

1 red pepper, chopped

1 bunch of green onion, chopped

1/2 red onion, chopped

1 cup of celery, chopped

1 ll-oz. can of shoe peg corn

1 small jar jalapeños or 4-5 fresh jalapeños, seeded and chopped

1 can black beans, drained and rinsed

1 can garbanzo beans, drained and rinsed

1 can pinto beans, drained and rinsed

1/2 bunch of cilantro, chopped (add to salad just before serving)


1/2 cup of sugar

1/2 cus apple cider

3/4 cup vegetable oil

(optional) Trader Joe's Orange Muscat Champagne Vinegar

  1. Combine the sugar, apple cider and vegetable oil in a saucepan, bring to a boil, and allow to cool.
  2. Prepare the chopped vegetables and beans and combine in a large, air-tight plastic container.
  3. Pour dressing over the mixture and seal in an air-tight plastic container. 
  4. Refrigerate over night. Occasionally, shake the container or stir the mixture.
  5. Do a little taste test and, if desired, spike it a little with a dash or two of the Orange Muscat vinegar.
  6. Add the chopped cilantro and stir before serving with chips.
